This perennial herb of the Zingiberaceae family is native to the forests of Southern India yet mostly cultivated in Sri Lanka and Guatemala. The leafy shoots of Cardamom extend from 1.5 to 6 meters from the branch while flowery shoots grow up to approximately 1 meter long. Cardamom essential oil is found in the large parenchyma cells under the epidermis of the seed coat with content varying from 2 to 10%. The oil is extracted from dried ripe seeds through steam distillation.
